The best tasting pork is hands down pasture-raised pork from heritage breeds! We are known for raising pigs that have pink, well marbled and tender meat. These pigs were raised on rotated pastures and fed only certified organic feed. When purchasing a whole hog you will be able to specify how your hog is cut, which portions to cure and smoke (hopefully you pick no nitrate cure), and how large to cut the roasts, chops, and ham or shoulder steaks.
A typical WHOLE HOG order will include:
- 28 - 36 pounds of ham cuts or can be ground pork or sausage
- 16 - 20 pounds of bacon / bacon ends
- 36 - 44 pounds of loin cuts (chops and/or roasts)
- 16 - 24 pounds of shoulder cuts (steaks, roasts and/or country style ribs, or ground)
- 5 pounds of spare ribs
- 8 - 10 pounds of hocks, organ meats and fat
- Additional 10 - 15 pounds of ground pork, sausage, or brats from trimmings
Pricing:
- $300 Deposit Due at time of order
- Total cost is $6.00 per pound based on hog hanging weight
- Customer responsible for submitting cutting instructions to butcher, and paying processing costs (Typically $400-$600 depending on how much you want smoked)
- We will pickup from processor and bring back to farm for storage and pickup at Farm Store for additional fee of $35.
Details:
- Typical whole hog hanging weight will be 180-220 lbs, yielding 120-160 lbs. of take home meat depending on the size of the hog
- Cured meats are processed using No Nitrate/Nitrite curing method.
