15 lb Pastured Pork Sampler - No Nitrate

This 15 lb. pork sampler pack will include below cuts from our own pasture raised, heritage breed pork:

• 2 lbs. of smoked no-nitrate ham slices
• ~4 lbs. of bone in and/or boneless pork chops (3/4" thick-cut; 2 per pack)
• ~3 lbs. of shoulder roast - traditionally cut w/bone and outside fat
• 2 lbs. of uncured bacon (2 packages of 1#, thick-cut no-nitrate bacon)
• 1# package of ground pork (85/15)
• a package of uncured ham hocks or neck bones (perfect for soups!)
• 1# package of sausage (based on inventory at hand we could include: fresh bratwurst (4 per pack); spinach/cheddar/bacon bratwurst; jalapeno/cheddar bratwurst; mild italian sausage (1# bulk pack); chorizo (1# bulk pack); farmers hot breakfast sausage (1# bulk pack); spicy thai sausage links or fresh kielbasa links

Processed with organic curing ingredients/seasonings and no added nitrates.

Farming Practices:
Our purebred Berkshire, Hempshire and Duroc piglets are born on pasture (no farrowing crates!), and not weaned until 2 months of age (factory farms wean as early as 15 days). The are never fed or administered antibiotics or growth hormones unless there is a life threatening condition which cannot be treated homeopathically.  We promote vitality and prevent internal parasites by giving them raw apple cider vinegar in their water. 

Once the piglets are weaned from their mother's milk they are fed free choice certified organic, non-GMO feed ration in addition to what they can forage from the pastures and woods.  They are moved to fresh pasture weekly during the growing season.
